Milí hosté, milí přátelé! 

Podzim je v Japonsku časem, kdy se svět zahalí do tajemství. V Kyotu se právě teď konají slavnosti yokai, tedy příšer a duchů z dávných příběhů, kteří lidem připomínají, že život nemůžeme nikdy plně pochopit, že je plný překvapení a lechtivé hravosti. Například kappa je vodník, který má na hlavě misku a v ní vodu, co nesmí vyschnout. Vždy si na kappu vzpomenu, když si objednávám okurkové kappamaki sushi. Je zřejmé, že i japonský vodník má rád zelenou barvu. Takovou tu unavenou zelenou. Podzimní. Ano, je podzim a s ním i podzimní večery, chladnější a delší, večery, kdy je příjemné posedět s přáteli a dopřát si dobrého jídla, co potěší na těle i na duši.

V Miyabi jsme pro vás připravili několik takových podzimních akcí. Už na přelomu září a října, od 30. 9. do 3. 10., bude v naší nabídce wagyu ramen. Hutný a voňavý wagyu vývar ponese otisk podzimu a váš zážitek umocní domácí wagyu roastbeef. Ramen ve wagyu vydání bude k dispozici jen pár dní, než se hrnec vyprázdní. Kdo jste ochutnali naší wagyu polévku na našich venkovních akcích, víte o čem je řeč. Ten vývar je jednička!

Hned pak přijde Akimatsuri, slavnost podzimu, kterou každoročně pořádá japonská komunita. Bude to 5.10. a my tam samozřejmě nebudeme chybět. Náš stánek poznáte snadno, protože jako každý rok už mnoho let nabízíme curry rice, Je to oblíbené jídlo japonských dětí i dospělých a na Akimatsuri prostě nesmí chybět. Přidáme i naše onigiri a futomaki a taky wagashi nerikiri od slečny Aiko. Na podzimním festivalu voní z každého stánku něco dobrého, bubny taiko rozproudí náladu a nás vždy potěší, že se tam setkáváme s mnoha přáteli i hosty z Miyabi. Malé upozornění – dojeďte na správné místo! Festival se totiž koná na jiném místě než loni, úplně novém místě.

Kdo jste milovníky noblesních jídel, tak se už jistě těšíte na Miyabi podzimní Omakase průvodcovaný večer. Hostina Omakase bude v úterý 14. 10. Náš mistr sushi Noritada Saito i já už promýšlíme, jaké lahůdky vám předložíme. Slovo omakase znamená „nechám to na vás“ a v Japonsku to bývá zážitek plný překvapení, host neví, co dostane a dokonce ani to, kolik nakonec zaplatí. U nás víte, že cena je 2 600 Kč, ale těch devět chodů Omakase menu zůstávají i pro vás tajemstvím. Rezervační záloha je 1 000 Kč a už teď si můžete své místo zajistit. Věřím, že to bude večer, kdy se naše motto „douzo zonbun ni otanoshimi kudasai – užijte si to naplno“, stane skutečností.

Zonbun ni otanoshimi kudasai dvojnásobně platí pro naše Sushi tabehoudai. Tabehoudai znamená Snězte kolik chcete a vězte, my se na ten večer musíme vždy hodně dobře zásobit. Tabehoudai každoročně pořádáme k příležitosti Mezinárodního dne Sushi a ten je 1. listopadu.

Zvu vás také na naše podzimní kaiseki menu. Dnes jej dokončíme a v nejbližších dnech už si budete moci Aki kaiseki objednat. Vše je v krásných nádobkách, co připomínají, že za okny je podzim a samozřejmě i použité suroviny jsou rodu podzimního. Dobrou chuť!

Moc se těším na podzimní kaki. Persimon. Tomely. Mám tohle ovoce moc ráda. Nesmí ale mít moc shibumi, tedy trpkosti. Kaki musí být akorát zralé a taky to musí být ta správná odrůda. Pláňata mohou být někdy pěkně trpká, jako je to v tom přísloví, kde se o trpkém kaki hovoří jako o nehodném člověku. To pořekadlo zní: Shibugaki no nagamochi. V překladu Trpké kaki vydrží nejdéle. Shibui. Už jen ten znak jakoby svíral jazyk – 渋.

Tak si prosím dopřejte nejen sladkých tomelů, ale i hodně milých přátel bez shibumi. Bez chuti trpké! Přeji vám, aby váš letošní podzim byl plný krás podzimních barev a vaše city tak akorát sladké jako dobré kaki, které je vhodné sníst přesně ve správnou dobu.
