MILÍ HOSTÉ, MILÍ PŘÁTELÉ!

Byli jste v těchto dnech v Miyabi? Ptám se kvůli těm krásným kaligrafiím, které zdobí stěny Miyabi. Jsou to díla Izana Ogawy a je těžké přečíst, co je na nich napsané. Jsou ztvárněny ve stylu trávovém, tedy stylu hodně změněném podle invence autora. Překvapilo mě, že i samotný autor se musel hodně zamýšlet, než mi podal výklad některých svých kaligrafií. Je to dlouho, co je psal. Do zápisu se totiž promítlo i to, co tehdy ve svém životě prožíval, a vy sami víte, jak mnoho se nám z paměti vytratí. Jednu kaligrafii ale Izan popsal bez váhání, i když právě u té jsem se já neměla čeho chytit, co to je za znaky. Posuďte sami. Kaligrafie je zavěšená na stěně nad lavicí v první místnosti Miyabi. Působící svou elegancí a  propojeností tahů. Teď už vím, co je na ní napsáno. Tou Zai Hoku Nan, což znamená Východ, Západ, Sever a Jih, čtyři světové strany, které nám definují svět. Izan připsal, že vyjadřují místo člověka ve vesmíru. Krásné! Ještě na jeden svitek vás chci dnes upozornit. Je zavěšen v místnosti s tatami, vpravo hned u vchodu. Kaligrafie vyjadřuje běh roku, ale přitom tam nenajdete znaky jaro, léto, podzim, zima, jak by nás mohlo napadnout. Místo nich je tam napsáno Ka Chou Fuu Getsu, což zamená květina, pták, vítr a měsíc. Jak poetické! Soubor těchto znaků je filozofickým pobídnutím vidět a obdivovat přírodu a její propojení s člověkem. Běh roku pochopíte jen skrze sebe! Tuhle Izanovu kaligrafii mám obzvlášť ráda. Zastavte se u ní. Navede vás k tomu, že se se zapálením srdce zadíváte do jara, které se právě teď hlásí o slovo. 

 

SANGATSU WAGASHI WORKSHOP

Velmi mě těší, že jste si oblíbili naše každoměsíční tematické workshopy wagashi. První březnový termín je obsazený a proto vypisujeme ještě jeden termín ve středu 25. 3. od 17:00hod. K čaji budou sakuramochi se sakurovým listem a nerikiri hmota bude pro vás připravená na jarní wagašátka typu harunokaze a sakurového kvítku ouka. Závaznou rezervaci si udělejte ZDE.

MIYABI HARU KAISEKI

Haru. Jaro. Ještě jeden den a budete si moci objednat naše Haru kaiseki. Však je na čase. A jaké je naše letošní Haru kaiseki? Rozmanité, bohaté a krásné, tak, jak kaiseki má být. Neobvyklé jídlo je jehněčí hřebínek s kizamiwasabi a taky uramaki s krabem, který může být v rolce celý, protože je soft. Je udělaný jako tempura. Jako sashimi jsem vybrala mořského vlka a jarně jsem ho smíchala s rozetřenými slívami ume. Malé baby sepijky jsme připravili jako tsukudani a saikyomiso na konnyaku dengaku jsme přikrášlili rozemletou petrželkou. Tsukemono je z ředviček a červeného shiso. Nimonowan polévka je jasně zelený krém z hrášku a uvnitř najdete daikon a tamagoyaki s kanpyo a edamame. Součástí zážitku jsou i mističky a talířky a krabičky vybrané tak, abyste cítili jaro i v tom, co jíte. Buďte i vy jaro! Ka Chou Fuu Getsu!

TUŇÁKOVÉ JARNÍ HODY V MIYABI

První otázka je kdy? To proto, že si určitě budete chtít udělat rezervaci. Takže bude to od 27. do 29. března. Pátek, sobota, neděle. Objednali jsme celou velkou rybu a já uvažuji, zda bychom jí neměli bourat rovnou před vámi, protože je to zážitek. Nechme to ale raději až na konec května, kdy je na tuňáky nejlepší čas, protože připlouvají blíž ke břehům, a uděláme to venku na naší zahrádce. Díky tomu budeme mít jarní tuňákové hody dvakrát. Pamatujete se na naše loňské menu tuňákových dnů? Bude podobné a možná něco i přidáme, a to tehdy bylo 12 různých úprav. No, už se těším!

ODEN – ODEN NA DEN 13, 14 a 15. BŘEZEN

V posledním dopise jsme druhý zimní oden oznámili, teď jen připomínám. Je to tento víkend a oden je do vyprodání várky. Oden se totiž musí připravovat ve větším množství a trochu s předstihem, aby se chutě pěkně usadily. Nejlepší je si oden zamluvit. Vaří jako vždy Jára Štěpánek, mistr oden a vítěz mnoha soutěží. 

Naším oden na den završujeme zimu a současně zahajujeme jaro. Haru. Prožívejte na plno každý den a připomínejte si, že kvetou květiny, zpívají ptáci, fouká vítr a Měsíc i my se na tu všechnu krásu s potěšením díváme. Jsme obklopeni Východem, Západem, Severem a Jihem a víme, že i my lidé jsme důležitou součástí vesmíru. Každý sám a všichni dohromady. Mějte se krásně a užívejte si jara!
